Manila Clams - Hog Island Shellfish Farm !

Not long ago I have detected the Manila clams. This small, oval-shaped clam is just great for steaming and just sensational over any pasta. Tender and full of flavor, place in a covered pot with white wine, garlic, onions, pepper and a dash of olive oil. The meat will plump and the shells open in a matter of minutes. Manila clams have been farmed for centuries in Japan, and they are becoming increasingly popular in the US. They are found throughout the temperate Pacific and typically live high in the intertidal zone . One of my favorite purveyors for shellfish here in the US is Hog Island Farms on the West Coast. These guys farm great oysters and also do farm the Manila Clams. You can order them fresh directly on their website. If you are into clams, you will love these. They make the best vongole ever!
