Gorgonzola Dolce - A Truly Royal Blue !
A few days ago I was sampling some outstanding Gorgonzola Dolce with some friends. The experience was mind blowing to say the least. A lot of people are not aware of the fact that there is regular Gorgonzola and then there is Gorgonzola Dolce which is a milder version. It is produced from the curd of only one milking and made into various sized wheels that are ready for market at a very early age, unlike other varieties of Gorgonzola. Different than many blue cheeses, the rind of the Dolce has some streaks of blue mold, but overall, there is less blue and more green mold than commonly found in aged blue cheeses. The Dolce is sweeter than other blue cheeses due to being ready when very young. But don't be fooled. When stored right and brought to room temperature a few hours before serving, this cheese will give you and experience nothing short of that of a very, very ripe soft cheese. This cheese is the easiest dessert you will ever prepare. All you need is a properly temperated piece of Dolce, some nice, fresh grapes, a piece of good dark bread and most importantly a nice, very, very chilled glass of sweet Sauterne wine - preferably Chateau D'Yquem! This will make for a unforgettable culinary moment - I promise you!
