Additionally, as with coffee beans and grapes, flavor is affected by harvesting and fermentation methods. Drying Cacao beans and coffee beans can be accomplished different ways and this too affects the taste. Even more flavor variations bloom during the roasting process. Looking for the perfect chocolate ice cream, I think I just found found four of them. Pure Costa Rican, pure Kalimantan, pure Ghana and pure San Dominican - all by Choctal.
